If it mainly happens when under load, I would change the fuel filter. While a semi clogged filter will allows enough fuel to pass when idelling or at slower speeds, it might not give consistant fuel flow when at higher speeds or under load - like climbing a hill.

On nearly any common engine, you can follow the upper radiator hose toward the engine and find the thermostat. I is often under a dome-shaped housing attached to that hose and bolted to the engine block, often with 2, at the most, 3 bolts. When replacing the thermostat, ensure you get the correct replacement gasket and thoroughly clean the surfaces of the removable housing and the mating surface and use a thin film of silicone sealant or adhesive on both sides of the gasket and do not over-torque the mounting bolts when reassembling. Not moderating the force you use can result in twisting off a bolt which then presents another problem again.
Unfortunately some cars may use a thermostat with a permanent element embedded that cannot be replaced without disposing of the entire multi-port housing that contains the thermostatic element; these are much more expensive to replace and no better than the simpler type.
If you are unsure, call several repair shops for quotes before turning your car over for this fairly simple job and you might check any business' reputation with your area BBB.
