The engine is not getting enough air, maybe the air filter is very dirty or the idle is too low. In newer vehicles there is some thing called IAC idle air control valve which would bump up the RPM so the engine dosent die BUT in the older vehicles there is a choke which works with a butter fly which bumps up the race should there be extra load put on the engine, load is stopping, turning, A/C on or other loads on engine.
