There could be too many reasons. Air filter, MAF sensor, O2 sensor, spark plugs, injector and so on. Simply, get the codes read if the check engine light is flashing. Most repair shops do this for free.

Engine stops running like out of gas. Running like normal then all of a sudden just stops. Have been able to restart after a little while, but at first would crank, but not start. Only tried for a few...

Sounds like you are either losing injector pulses, fuel pump pressure, or spark pulses.

Before tearing into anything, check to make sure your battery and cables are in good shape. Then check for engine fault codes. Even if your check engine light is not lit, there may still be codes pending.

You need to get a scan tool and see what codes it is throwing when the light comes on. This will eliminate the needless replacing of parts by guessing.

Runs rough at idle and driving the check engine light is on

if it stumbles at idle it needs a egr valve (dirty, sticky)and then the light will stay off when turned off

Ran scans and came up with intermittant signal

replace the PCV valve, its cheap, causes THAT to happen when dirty, and takes about ten minutes if you are comfortable working under the hood.

1997 chevy 2500 4x4 stumbles

Fuel pump is most likely the cause. Probably just barely making the required pressure to start. Needs to maintain 60-66 psi while cranking to start.
