The converter can cause it yes

#1. Driving on rough or gravel wash board road?
Could be convertor. Especially if you truck has lost power lately.
#2. EGR Valve. Computer is trying to adjust for an improperly operating EGR valve. Not one which has completely failed, the ECM would circumvent this in most cases and set a code, causing the Service Engine Soon light to come on.
#3. Oxygen sensor would set a code, SEL would come on, and the computer would bypass this, and you would see a drop in fuel mileage. But from time to time the computer will try to read the sensor and you might notice a difference while driving, but it would go back to a preset value, or default value, and continue running.
4. I suspect strongly that your EGR has malfunctioned. Check fuel pressure, but remove and clean your EGR valve with an approved cleaner. Reference your auto parts store for that info. Make sure everything moves freely, and check your catilytic converter by seeing how much exhaust pressure is at the tail pipe. If it is weak, have someone rev the engine slightly, if you hear a "JET" or other sound like it seems to be under a lot of pressure, or if the donut gaskets at the exhaust manifolds are leaking/ blown out, then there you go, to the muffler shop.
