If it still hesitates I'd say it was a carburetor issue (accelerator pump, power valve..). If it is only acting up when accelerating (while driving) that would tell me it ... 1980 CJ5Renegade with 304 v8 .... The idle mixture screws were nearly 3 turns out, I think i have them somewhere around 2.5 turns right now.

When was the last time that the carburetor was stripped and cleaned? Also have you checked the fuel filter? Finally, the problem seems to come and go as the engine is run (and it gets hot) check that the fuel line and any electrical cables are well away from the hot engine as far as is possible.
Best guess is O2 sensor is reading too much unburned fue in the exhaust for some reason and leaning out the fuel flow to compensate. Runs when you throw more throttle at it but leans out as you try to hold steady speed. Should throw a code though.
it sounds very much like fuel starvation, what carbs? on SUs the needle valves can stick closed so that carb runs out of fuel and you run on 2 and abit untill the vibration opent the valve and off you go.
My First thought is fuel injectors pull off your air intake and airfilter cover spacer. start your engine look at the injectors you should see i steady stream of fuel spraying in. if you don't replace your fuel filter, injectors. If you can try to make sure your fuel lines isnt clogged.
