I'ts normal on old trucks. But without further analysis i can only refer these problems.1 Your air fuel mixture is either lean or too rich. usually and o2 or Oxygen sensory problem.it causes a starved engine failure or what you described.
2. you have a possible vacuum leak
3. your egr valve has broken seal or gap
4. you dont have constant power like (spark, fuel or alternator/battery)

sounds like the idling solenoid. this solenoid when powered by 12 volts, would let a small amount of gas to the carburetor or intake line which ever you are using. if it is a fuel injection, then there could be a problem with the computer that monitors idling.
Quite a few things can cause a car to die after idling for awhile, but if you have verified that the fuel pressure is actually dropping when the motor dies, the likely culprits are: 1) Electric fuel pump in the gas tank is bad 2) The fuel pressure regulator (on the throttle body) is bad 3) An electrical problem in the power to the fuel pump (like a bad fuel pump relay or lose ground wire to the relay's circuit)
Honestly, I would say its your Mass airflow sensor. Sounds like your truck is sucking either not enough, or too much for the air/fuel mixture to compensate. Thats what it sounds like to me. I would replace that, or even clean it. If you take it out, and clean it up real good with some alcohol, you might catch a break as well. Hope all goes well.
