took a look at the head gasket and nothing is wrong with it and also looked at my dipstick and there is no problem with any of them. I'm thinking it might be my mass air flow sensor

White smoke indicates a blown head gasket check for milky looking oil on the dipstick

1993 gmc suburban rough idle, stall in reverse

Idle air control (IAC) control rpm idle during idle.

Test it on idle with ALL electrical on full force.
RPM should increase.
If RPM remain the same then IAC is question.

I have a 98 gmc sierra 2500 eith a 5.7 L v8 engine. My problem is this: my truck is hard to start, especially when its hot out. I have to floor the gas to get it to start. The acceleration is horrible, so...

The first things I would try would be pulling the vacuum hose off of the fuel pressure regulator and look for presence of fuel,if there is fuel the regulator has failed.Next would be to clean the mass air flow sensor. Also a good tune-up would help fuel mileage as well.

86 gmc high sierra k1500

If the check engine light is on, you would need to check the computer for trouble codes first.
If the engine is fuel injected, it could be a bad injector. If it has a carb, it could be a sticking choke or an internal leak.

1999 gmc suburban-smoke comes out exhaust and smells like gasoline

If the check engine light is not on, I would check the fuel pressure regulator and for problems with the fuel return line.
If you have a leaking injector you should get a check engine light and code for a cylinder miss.

I have a 2000 gmc serria 2500 n it is blowing out white smoke what could b causing this

White smoke is often water. Sometimes it is from the separation of alcohol in blended gasahol fuels. Moisture is attracted and as the mixture settles, sometimes gulps of water pass through.
You could also have a head gasket leak. The exhaust would smell sweet. You will get more condensation in the exhaust until the pipes and mufflers heat up. The moisture in the air will also act on this and produce a vapor, like seeing your breath on a cold morning.

You can get a compression test or check your sparkplugs for signs of water.

I question the thinking of your mehcanic, the exhaust has odorless cumulatively POISIONOUS Carbon monoxide, smell testing went out in the 50s.

The questions are: is it consuming oil, is it running rich, any error codes? How is fuel mileage? What are the exhaust readings? The answers to these dicate the next step.
