After coming to a complete stop, when I let off the brakes, I am hearing a clunking sound from the front area somewhere and can't seem to find where the noise is coming from.

You need an inspection promptly. Without seeing it I'd guess a CV joint.

Clicking noise brake pedal

It possibly is the brake light switch, this is mounted on the top of the brake pedal, check the brake lights are working? The switch is not normally loud enough to hear? Check the area around the brake pedal, make sure things like heater air pipes are secure and away from the pedal. If the brakes are ok and the brake lights are working, it has to be something fouling the pedal.

I hear a loud clunking noise coming from the rear of the truck every time i take off from a stop

Three things: Either the rear brakes are releasing, causing a clunk, try service and adjust rear brakes. If not, go to the drive shaft, check the u-joints and/or jack up the rear of the truck and rotate your tires by hand to see if there is a clunk in the rear end itself.

Your two thoughts are probably correct. If you feel it more in your seat, it's probably the mounts. If you feel it more in the steering wheel, CV shafts.
