soaking wet drivers side front and back. Seals all seem intact on doors and windows. Sounds obvious, but much worse after rain- suggesting not from coolant?

Do you smell a sweet odor? like from the coolant in your radiator?
Your heater core may be leaking coolant into the car.
Or your front window or door seals may be leaking.

2004 rear drivers floor board is wet

Sounds like the door gasket or trunk gasket is not sealing.
You may have to take it to a body shop to find the problem.

My 2004 1.4 Polo keeps getting really wet inside, and today i noticed mould on the back seat where everything is so damp. Could it be a clogged drain? If so, how do i get to it?

lift the spare wheel out of the car there is a drain plug under it.

also its more likely to be leaking through the rear lights or rubber seal around the doors or boot. I have a golf was leaking from the back passenger door. and the front passenger side. back was the door seal and the front was a drain plug that was clogged up lift the bonnet and look around the bulkhead/ thats the part closest to the windscreen where the wipers are loacted, look right down it for any leafs etc.
