MANY causes. Many things can cause overheating at freeway speeds.
Does not overheat in town driving?
Open the hood and when the engine is warmed up,
rev the engine and see if the top or bottom hose is collapsing, restricting water flow.

When it's cool,be sure there is coolant INSIDE the radiator.DO NOT open when warm or hot.

if there is a lot of bugs stuck on the A/C condenser, that will restrict air flow to the radiator.

it's OK to click on the A/C button when you want heat-the A/C compressor kicks in when it's set to defrost, anyway.

The A/C request should kick in an extra fan to cool the engine.

i would say if the fluid is full and the thermostat is not sticking it would be your engine coolant temperature sensor (ect) sensor

SOURCE: What do you mean cluster contacts bad !Whats the solution?

Remove the speedometer head unit, and check the soldered joints on the back. It's a common problem with these and some Chrysler products. "Randomly" is when the crack closes and makes contact, like if you hit the top of the dash and it starts working again. The speedometer head cluster.

Have you checked for Diagnostic Fault Codes yet? Have your local auto parts store check for codes if you don't have access to a code reader. New Bluetooth OBD readers (ELM327) that pairs with your smartphone or laptop and a free app. (Called "Torque") Great reader for under $20 in most cases. Start there first. Is there a Temp Gauge for coolant? If so.......what is the operating temp doing during those highway trips? If the coolant is overheating, it may be heating the transmission too.
1. Check for codes.
2. Have cooling system checked, cleaned, flushed, and new coolant installed.

After highway driving for 2 hours and stopping for gas the car would initially start and then stall, it would run again until the car cooled for 30 minutes.

Sounds like your coolant level might be low. At highway speed you probably have enough coolant and with the air passing thru the radiator keeps the temp down, but at idle not so much. Or depending whether you have a belt drive or electric fan. Belt driven, could need a new belt.

2003 temp. gage goes compelety to right , but engine doesnt get hot ?

It's very possible that the gauge itself is bad, it is common for the stepper motor that drives the gauge to go bad.

the fan will turn on when the engine temp reaches a set temperature and will only turn off when the engine drops below a certain temp and on the highway running hard it may stay on longer

if you drive directly with a cold engine onto a highway speed road it isnormal for the temp to go high then low its because the thermistat isnt fast enough to keep up with the heat produced. ive noticed all of my cars did this when i lived right on a highway.if it is ok the rest of the time i wouldnt worry about it unless actually overheats

Same problem in my 2001 lincoln ls.

youre using more power during highway drives, therefore more vaccum. check your vaccum lines for leaks which may cause the vent door to close/or open which may be causing your problem. if your temp gauge shows the needle in the center of the gauge while driving on highway, your thermostat is fine. check vaccum.

Why does my temp gauge fluctuate when i drive in town but stays level on the highway

When on the highway the wind blown through the grille naturally cools the rad coolant. While stuck in traffic the radiator fan will intermittantly cut in to prevent over heating, thus the fluctuations in the temp. gauge.

Is your coolant actually boiling? Is so, you may need a new water pump.
