If the gas gauge works, the problem is not a fuse.
All of the instruments get power from the same circuit.

If any lights come on the dash that can be adjusted by the dimmer switch then it may not be the fuse. and replacing would be the next option.

My temperature hand and speedometor hand does not work properly, which fuses to I replace

Those are analog gauges. They have no fuses! The speedometer has a cable that spins in a hole at the back of the speedometer. If it is not spinning the cable needs to be changed or lubricated. The temperature gauge connects by a wire to the temperature element on the block of the engine. Either the wire is broken or the sensor element is shot!

Lights or fuse for my speed odemeter guage and heater/air conditioning system

These lights for the dash are controlled by a rheostat instrument control dimmer switch next to the main light switch for the headlights, it is either turned off (have seen this dozens of times) or it is defective. Below is a picture of the switch assembly I speak of. The thumb wheel next to the knob is the dimmer control.

My temperature gauge and my fuel gauge arent working and the fuse is is good .... also how hard is it to replace the speedometer cable ?

On replacing the speedometer cable, on a scale of 1 to 10, probably 3 or 4.
Hooking to the transmission, " baby play ", connecting the other end to the speedometer, well that represents the 4.

The temperature and gas gadges aren't working.

Usually the cause of more than one gauge failing is the small metal can regulator on the back of the gauge case in the dash
