There is a red symbol on the dash just underneath the gauge on the far right. It will not go away and I do not know what this light stands for. It looks like a down arrow pointing at liquid in a container. What do I need to do here?

Re: 03 Malibu Red Light
This light is a warnning light which indicates that your coolant reservoir is low. there is a plastic tank in your engine that showes the indicator level on its side .make sure the engine is cold and open the cap and add coolant if needed. the light should go off.if not let me know.

this is your radiator signal that the radiator is low on antifreeze probably due to a slow leak or just possible evaporation over long periods of time w/o checking the anti freeze reserve tank and or radiator
On my daughter 2000 beetle with 2.0 engine, the blue thermometer light comes on solid when you first crank it up because the coolant/engine is below operating temp. I have seen the red thermometer blink when the coolant is low.
That's a check engine light, the engine on your car has several sensors installed on different parts of engine and drivetrain, any time any of them senses a problem that red engine light come on on the dash, the way to know what's the problem is to take it to an auto place or buy an OBD ( On Board Diagnostic) tool and connect it to the connector located underneath the dashboard, the scanner will get the code and by looking up that code you'll find out what part of the car has problem.
You can continue using your car and some times these problems are not very major ( emissions control related) but if that light starts blinking that's the time you should seriously consider having a look at it.

Well I can tell you the battery symbol is a warning that there is an issue with the charging system, most likely a faulty altenator. As far as the other, I'm not a mazda expert, so I'd have to say look in the owner's manual, but that's a wierd one, I'm curious to know what that means, too.
Is the car actually overheating or are you just getting a red temp symbol on the dash? What does your temp gauge say? If it is indeed overheating and they did replace all the parts you say they did, they probably didn't bleed the cooling system properly. If any air is trapped in the system, it will cause a overheat condition. Take it back and tell them to bleed it right. Make sure they tightened up your radiator overflow/fill bottle cap as well...turn it until it "snaps". Now if the car is not physically overheating, and the temp gauge shows normal with the needle straight up (~190F), but you show a red temp symbol on the dash, your coolant level sensor in the overflow/fill bottle cap could be defective, the harness that plugs into it could be loose and/or your coolant level is too high. Lower the level until it is in the cross-hatch area printed on the bottle and reseat the connector. If it still has the red temp symbol, chances are very good the sensor in the bottle went bad. Mine went bad on my 04 Jetta 2.0 and I got a constant red symbol on the dash. Hope this helps you out.
Is it in the center of the dash or in the right corner? The one on the right is for the ABS. The one in the center is a general message. Using the read function on the signal stalk there will be an explanation of the light.
