Question about 1987 Chevrolet R20
Engine is warm. Will do it when taken out in the road, then pull over, giving it a chance to go to idle again. Runs ok at higher rpm. Does not do it on every instance.

If it does not do it in park or neutral, it could be a number of things. One being a sticking Torque Converter Clutch solenoid (TCC). It could be that it needs a simple tune-up. How often does this problem happen?

I worked on one of these the other day and what fixed the same problem it sounds like is I changed out the distributor cap and rotor. the rotor can be a pain to get off. and also don't cross any plug wires take one off at a time and put it on the new one.
