Unless the car is overheating you probably just have a bad temperature sensor probably located on the intake manifold....

SOURCE: location of engine coolant temperature sensor on

It is a 2 wire seneor under the throttle body. You will have to remove the air breather and it will be a brass/black plastic sensor. A 3/4 socket will fit it.Good Luck

I put a coolant temperature sensor on my 96 ss Chevy impala when I turn the car on the temperature gauge goes all the way up to h and goes back down to c and does not move to read temperature

Was the gauge doing that before you replaced the sensor ?
What happens if you leave the sensor disconnected ?
And did you replace the right one ? There should be two, one for the gauge and one for the computer.

Where is the engine coolant temperature sensor or ECT on a 2003 3.4 leter chevy impala

Follow the upper radiator hose to the engine. Right where it goes to the engine (thermostat housing) there should be a brass screw-in sensor with 2 wires coming from it. Thats it.

The hot coolant guage goes up and down

Check the coolant level when the engine is cold. If it's correct there may be a loose/dirty connection at the temperature sensor. The location differs depending on the engine.

In my chevy impala i have no hot air comming out of the vents. The temperture gage reads at about half and then will fluctuate. What could be the problem?

Check your coolant level. When the level goes down, the heater is usually the first unit to show the lack of coolant (no heat). As the coolant decreases, eventually the temperature sensor is intermittently 'out of the water' and can't indicate water temperature, causing the fluctuation. If your coolant is low, find and repair the leak.
