If you like first to check and then proceed I give you the following advise. Visit a Garage and request for emission test and surely you will get the Cat result of serviceability. Also If you still not satisfied visit an exhaust fitting workshop and request for the following : If the cat is in such a place where is easy access to make a hole before the cat for few minutes, start the car and accelerate there you should notice if the crank start is much easier and the accleration is strong enough and feel the engine breating better, If so then is the answer for a faulty cat and should get changed.

The cherry red catalytic converter is the sign of a complete blocked cat and needs immediately replacement. The starting problems you have are due to this situation. Change the cat and you will see improvement.

My 5.7litre supercharge ute is spitting the dipstick out when accelerating

There must be a pressure relief valve block or breather valve has to be high oil pressure and it is venting through your dipstick. Lagging out could be blocked injector, worn spark plugs or other fuel starving.

i know that if it is spitting you need to change the spark plugs, this might also help the bad starting, and also the cut while running.

Check the exhaust compression. Remove the O2 sensors before the cataylic converts and see if it improves. If it does that means your cats are cloged and need to be replaced.
