I suspect that there is a failed bearing on the output shaft or on the cluster shaft. This comes from the burnt oil condition which happens when a bearing is over heating due to failure and the gears not aligned when trying to change gears.

How often should I change my gearbox oil

Technically, never. I doubt your owners manual mentions servicing it.
You could drain and fill it every 50,000 or so if you want to.

I was wondering how much trouble it would be to change out an impeller on a esrly 80's 110 hp evinrude tracker outboard engine.

Impeller? or Propeller? Propeller is just a nut with a carter key holding it on.

Impeller, or water pump? It isnt too bad. You have to take the lower uint off. There is a roll pin in the linkage going to the forward/reverse mechanizm. Then take out the bolts and drop it down. It has a shaft that comes with it out of the engine. Then the water pump is bolted on that shaft. Check the seals under the pump and the oil in the gearbox for water. Mine was bad and pumped water into the gearbox and oil up and out. Then froze and busted.

There is an oil seal on the gearbox/transaxle input shaft. If this has failed it will leak oil on to the clutch. It might be able to be replaced by just removing the gearbox again to access the seal. Most likely though is, the gearbox will need to be opened up to replace it.

Transmission slipping when you first accelerate. Wondering if it could be something electrical. Please advise on what needs to be done.

you have an electrical gear box but it still works on oil presher and clutch/brake bands,,,if there slipping first check the gearbox oil is full and the colour of it,,it shouldbe red,,if its a dark brown and smells burnt you need to have the gearbox looked at,, do this sooner than later as the longer the box slips the more its going to cost you fixing it,,
