SOURCE: over heating and loosing coolant
two things to check .first make sure you have proper air flow through the ac condenser .Second thing I once ran across this problem with a gm product all tests showed no gasses in coolant but i removed the spark plugs saw slight traces of coolant on 2 plugs. the fix was strecthed head bolts when engine got hot they strech just enough too cause this problem.

maybe the garage you went to was unaware of the bleeding sequence of the cooling system
I'd say wait at least a day or two and if still no change go back to where the vehicle was serviced and DEMAND and second repair for FREE
additionally, the thermostat is only replaceable and NOT repairable
if they told you they "repaired" the thermostat question, in DETAIL, what they did!

Max as in overheating or not, it shouldn't cool down afterwards, it should stay at a steady temperature as long as it is where it's supposed to be. This is not a problem.

While driving with the heat on you are taking the heat off of the coolant via the heater coil, letting the engine stay a little cooler. You might want to have your radiator cap checked, coolant level and also the flow through the radiator. it could be plugged. take it to your mechanic if you are not comfortable doing this yourself. You can be injured by hot coolant under pressure.
