No you should never pour tranny fluid down that dipstick..infact the transmission for mk3 jettas dont have dipsticks for automatics. you need to find someone who will change it for you.

TO CHECK OR ADD TRANSMISSION FLUID TO JETTA IT HAS TO BE BROUGHT IN TO A VOLKSWAGON DEALEALER THERE IS NO DIP STICK EVERYTHING IS SEALED SO ONLY THE MECHANIC CAN CHECK IT.

On the manual transmission you go through the vehicle speed sensor (VSS). Its suppose to go 1/2 way up the teeth marks. Does it not say in the Chiltons manual? I can check when I get home.

Go to volkswagen for the fluid.
I am assuming you are talking about an automatic transmission? if so any aftermarket fluid will make short work of your transmission.
if you are talking about a manual transaxle..then I hear good things about Redlines' MT fluid
