When my fans come on in my 2006 chrysler pacifica they are very loud and make the car vibrate but no engine fix light comes on

My car starts engine runs very smooth, but when the fans come on to cool the engine, they are making a loud low noise, and vibrating the whole car

You will need to have someone with experience to hear the noise to identify what it is.

2006 pacifica stalled out while driving. Now it won't even try to start. Check engine light came on.

Look under the hood above the battery. In the box are your fuses and relays look for a bad fuse or a bad blower motor relay. If you read the cover you will see there are spare relays in the box just swap them

Starts to vibrate while driving, check engine

The reason your check engine light comes on is that the system is letting you know there is a problem, and it SHOULD be stored so that a hook up to a OBD II reader will locate the code.
The only way you are going to get a burning oil smell is to have engine oil dripping on to a hot surface like an exhaust manifold or pipe.
Check for oil leaks at manifold, valve cover gaskets ect.
How long does it run again after it stalls ?

On our 2006 Pacifica, the cooling fans will start

The fans are controlled by a temperature sensor that activates a relay. Could be either. Since it is winter, you could try narrowing it down by unplugging the sensor. Then if it still comes on, it has to be the relay. It is does not come on, it has to be the sensor that is shorting.
