Usually when rpm at 1000 to 1500 and in high gear and may be going up a slight grade just before the tranny shifts down

I would consider changing the vehicle speed sensor. When they go bad, they can really throw out a lot of bad data to the computer, resulting in unexpected behavior like you're experiencing. They're only around $20-$25. I hope this helps! :)

High rpm when warming - choke problem?

It is a little high but if the ambient temperature is very low it would be ok providing you understand that there will be a bit less economy. You can fine tune the choke to drop another notch on the accelerator cam so that it would idle at say 1500rpm and the gear engagement would be less harsh

When my car is idling or I come to a stop it is chugging, when I accelerate it is fine. The RPM's drop to just under 1000. This just started, I thought maybe bad gas, but filled up with High Octane gas...

Could be a variety of systems, however I would suggest the following first:
Don't waste money on High Octane fuel or injector cleaners. These have very little to no impact on performance anyway.

Idle Air Bypass or Idle Air Control Valve.
You can often test this while at idle with AC off. Then turn AC on to determine if the RPM or idle changes. If no, then suspect the IAC valve.
It can be bad or just be very dirty (ports blocked).
Remove, clean and replace to see if that helps. If you see a lot of carbon buildup, then get that all cleaned up.
If this does not help, then replace with a new one and go from there.

The throttle is running at a high rpm about 1000 and throttle cable has some slack in it usually idles at about 700 rpm can it be adjusted or do i need a new cable its a 1998 gmc sierra 1500 5.7 litre

The throttle cable is probably ok. I would be more likely to suspect the idle air control valve/solenoid to be causing your trouble. Sometimes trouble with the EGR valve not closing all the way will cause this problem as well.

Sounds like a plugged catylic convertor. You might check with a GM dealer to make sure if it falls in the Special Policy coverage to get it replaced under warrenty, it has to have less than 120,000 miles on it though.

Sounds like a burst of Air when changing gears???? and Wurrrrrrr when accelerating???

first thing you need to do rule out vacuum to shifting module make sure there is no leaks you usually can detect by a hissing sound or high pitch whistle check your shifting module on your transmission providing transmission screen and filter has been maintained as for the second part gm powersteering pumps have a tendency to whir if a new belt has been installed until it breaks in
