2001 monte carlo ss. Rear wheel bearings making a grinding noise

Wish to change bearings and hubs. Is there much labor involved or just remove brake caliper and unbolt hub/bearing assembly and replace?

It is pretty easy, there is not much labor involved if it has anti-lock brakes in the rear you will also have to un-plug the wire harness attached to hubs.
