Question about 1991 Pontiac Firebird
1991 firebird engine stalls, seems like flooding when excellerating. When first mashing excellerator, wants to cut off. will not idle at 1000 rpms when in drive.
While you are checking all of that, double check your thermostat and make sure it is good and operational. My thermostat in my trans am was stuck wide open and wasn't getting heat and acting the same as yours. I put the new thermostat in it, and it runs in tip top shape. If the thermostat is good, your temp sensor on your motor is bad, look into that.
Hope this helps you out.

You should check your timing and make sure you're getting good spark. fuel could also be the issue, filter or injectors. There are a few different things it could be but i would check ignition related issues first
