What causes oil light to flash, vehicle to lose RPM's, but not overheat? Engine was immediately shut down.

Assuming the oil switch and the associated wiring are ok the oil light flashes because intermittently there is insufficient engine oil pressure.

Having no oil showing on the dipstick could be a clue to why...

If you are sure there was oil in the engine when it was parked I would suspect mischief if the car was accessible. Draining the oil from an engine as a form of revenge is not unusual.

The engine oil does provide some cooling effect to the internal moving parts of an engine but by far the most important function of the oil is to act as fluid bearings for the crankshaft and connecting rods. Pumped under pressure into the clearance between the bearing surfaces it enables the crankshaft to float on a cushion of oil as it rotates.
If the oil supply is insufficient or none-existent very soon the crankshaft will be revolving on the surface of the soft metal bearing shells that are designed only to protect the smooth and shiny surfaces of the crank for a very short time at start-up until oil pressure is available. The soft metal will quickly become hot and begin to melt and move resulting in increased friction and eventually serious damage or seizure. This is particularly true of the connecting rod bearings that are very highly stressed and fail much more quickly than the others.

After it runs for awhile it starts leaking antifreeze coolant

If you can't see any obvious leaks around rubber hoses or radiator, it could be leaking though the engine block gasket into engine. Or even escaping through the rad cap when hot, leaking as steam slowly. Try putting a new radiator cap on (rad cap). As a quick fix, put Radweld solution into coolant. Any auto shop has it.

Engine overheating quickly

there are 2 or 3 fans up front on all A/C equipped cars.
the fan closed to engine (rad rear) turns on parked and idling
all engines will overheat parked, if the fan goes dead.
so are you saying this fan is dead.?
if it dont overheat moving fast then the cooling system is usually good
and then you stop at a traffic light this fan must turn on.
on cars with 3 fans , some stage up, 2 on if too hot. or all 3 on.
the FSM covers this logic clearly.
in the USA car.
the element has 2 fans (some engine options my differ)
the right fan is for A/C
and left fan is for engine cooling, (im looking at to see that)

the fan turns on via a relay that he PCM controls
the PCM see the ECT sensor in the engine go to over say 225F and
it closes the relay, and the fan spins at full speed.

fuse 4 runs this relay, in the fuse box
the relay and fuse are named
radiator fan.
