check fuel pressure at regulator, should be 40-50psi, could be mechanical fuel pump. go to ford and/or international truck service dealer, they have fuel pressure tester.
my 97 F250 acted same way, would white smoke on highway, was mechanical fuel pump not providing enough fuel to injectors.

there is a component called an air bypass valve. located on throttle body near the throttle plate. some of these are cleanable. it is held in with 2 8mm bolts. remove from throttle body and then seperate the solenoid from plunger by removing 2 phillips screws then you will be able to clean shaft with a good carbcleaner.

IF MY MEMORY SERVES ME RIGHT THE 5.0 IS A SMALL BLOCK AND THE 7.3 IS A BIG BLOCK. IF THIS IS THE CASE NO THE TRANY WON'T BOLT UP
