How do I set tappets of a 2.5 diesel turbo mazda

you haven't mentioned if it is a 4 cyl or not. However bring no 1 cylinder up to tdc and watch the tappets of the next cylinder to fire. when that cylinders rockers are in valve overlap situation ( exhaust starting to close and inlet starting to open) then that will be maximum clearance on no 1 cylinder and is when you set the tappets turning the engine until the next cylinder is at TDC watch for the next cylinder again to be in valve overlap and repeat as for no 1 cylinder

Mazda Soho 121 Clutch Problems

sounds like you need to bleed the brakes again. Get a clear hose and put it on the bleed nipple on the slave cylinder so you can see the air bubbles in the fluid. bleed the clutch until there are no air bubbles in that clear hose. Even the little tiny bubbles can add up to lots of air in the system.

It's possible MAF (Mass Air Flow sensor) but before you replace, reinspect all small vac lines and ports on carb. I'm suspecting you might have missed one. Fluctuating idle is generally a vac leak
