Question about 2000 Cadillac Escalade
Before replacing head gasket put a pressure test on the coolant system and look for a leak around the intake manifold gaskets.These gaskets are prone for leaking and allowing coolant into the oil.

Okay, it sounds like you may have also seen white smoke from the exhaust.
Based on your description, it doesn't sounds like it was repaired properly, or there could also be a crack in the block.
Usually, when the engine generates enough heat and pressure to blow out a head gasket, it tends to warp the heads, and sometimes cause a crack in the block or manifold (but not as likely in your Escalade as in import cars). This means that changing a blown head gasket has to include checking the heads to make sure they don't need any machining to take care of any slight warping that occurred, so they seal properly against the new gasket and block. Without doing that, the head gasket is just going to blow out again when under pressure around any potential gaps, no matter how slight.
From everything you explained (and thank you for that!), it doesn't sounds like a proper "repair" was done, and it needs the eyes of a trained and properly qualified mechanic. I just hope he didn't do more harm to your vehicle.
