Filled full with oile could that make the head gasket blow and over heat
If the coolant level is full, the fans are coming on and the t-stat is working properly than yes it could be a head gasket. Something is drawing too much power and you will have to find out which it is. When the head job was done they may have gotten a wire pinched in the block or some thing. You would have to be quite mknowledgable in vehicle electronics to find it. I would suggest that you take it back to the shop or guy that done the head job for you to correct.

My girlfriend has a 91 sundance. I solved that prob by doing a coolant flush and replacing the radiator cap. The gasket was torn to shreds on the cap

if u live by a library go to their reference area and look up their car repair manuals photostat the 3 pages if library is neg ask an auto shop if u can copy theirs ,or go 2 a police dept that has the mech shop on grounds they have the books and cd s for the ford line. or last chilton or haynes books

Is your car an SC1 or an SC2 model? The reason I ask is because a head gasket for the SC2 is about $150 while the head gasket for the SC1 is about $70. Depending on what shop you go to, the labor rate can run anywhere from $85 an hour to $150 an hour. That should answer your question.

This is a very lengtht process so my suggestion to yoy is to go to an auto parts store and ask for a "chilton book" for your vehicle.this book will walk you through the process
