Start by checking whether the Throttle Body is clean on the inside. Spray it thoroughly with Carburettor Cleaner and drying it afterwards by blowing it dry with Low Pressure Compressed Air. Make sure the Idle Air Control Valve is CLEAN!!! Do same as with Throttle Body. Make sure ALL wire connections to components on the Intake Manifold are sound and ensure that the terminals inside the connectors are sound. Make sure the Manifold Absolute Prssure Sensor (MAP) is wirking fine and that there is a good "O" Ring Seal between the MAP and the Manifold.

After market alarm or remote start. Every time I find them on a car with a security or electrical problem, I tear them out. Fixes the problem 99% of the time.
was the truck ever in an accident especially a front or fender hit if so theres exposed wires that are hitting each other maybe from bumpy driving then it happens try to trace wire harness from either side and look for insulation breaks in the wires also there could be a leak that water is getting to the fuse box and causing the hots to jump each other then in either case when you shut down and restart everything is normal till it jumps again sometimes body shop guys drill holes to pull out dents and they end up drilling through the wires then at certain times the current can jump circuits this also applies to front hits where sharp areas gradually cut the wires and on a bump hit you get the problem
Clicking with no rotation can either be the starter solenoid, weak battery, corroded battery terminals/clamps, or a loose connection at the battery.
Before condemning the starter, have someone turn the key and see if the clicking sound is coming from the battery area, also clean the terminal/clamps, and make sure the connections are tight.
Also try jump starting it. If it jump starts then the battery is fine.
I would recommend having the battery checked when you take the starter in.
Now if you are having a hard time getting the starter out it is more likely that there is a bolt/nut that is still on rather than the starter being seized in the flywheel. If you are 100% certain all the bolts are out then whack the starter with a hammer and watch out because it is pretty heavy and once it falls could easily break a finger or injure you in another way.
The voltage of your car's battery and the surge from the other car's battery when you jumped might have been enough to blow the fuse on the electronic speed sensor, or the sensor itself, try locating the fuse box and search for anything to do with sensors or so, if there's nothing wrong there it's the sensor itself, and you'll need to take it to a workshop.
Have you ever changed the fuel filter
