Setting idle speed on a 2001 vw beetle 2.0-

Car will only idle at 500 rpms. The engine needs to be completle warm or it dies

The engine doesn't have a mechanical idle speed adjustment - VW/Audi have a software called VagCom (the diagnostic software they use) that is used to adjust the idle - it's completely computer-controlled. You have to change the idle speed using the software.

What should the idle rpms be when its cold and when its warmed up

As a general rule of thumb, about 700-750 for an automatic and a bit less - maybe 500 for a manual (depends on the make..).

Expect the rpm to drop slightly when the engine is warmed up.

You have an idling problem? The first thing you suspect is the MAF

If a mouse chewed the wire into you may need to check all the wires. It sounds like you need to check the operation of the idle air control valve and it's wiring circuit. Good fortune!

sounds like the clutch isnt engaging properly in the situations you described. may need to check fluid levels if there ok. then may need to get serviced or checked at least

Computer reads multiple misfires rough idle trouble starting

The air fuel mixture sensor is probably starting to fail. You need to have a simple diagnosis done at the shop and then have it replaced - they are usually not much a reputable mechanical shops. When the motor warms up your air/fuel mixture changes hence the rough idle etc. Hope this helps.
