Is it always blowing cold air or only with a/c on if it seems to do it on slower speeds the blower fan may be the issue.

The blend door (mode door ) is a very common issue there is even an associated TSB t(technical service bulletin) it has to do with the blend door becoming warped and binding the accuator. In an opened or semi-closed position

My heat in the front of the vehicle only blows cold air when the thermostat is turned to warm and makes a knocking noise like the door/flap within the vent is trying to open. The knocking noise goes away...

Yes, It sounds like the vacuum pod that operates the door/flap is bad or loosing vacuum from the rubber or plastic hose that connect to the pod. If the hose is not fitting on tight or split or cut the pod wont get enough vacuum. But ,You should first check all vacuum hoses on the motor and under the hood to make certain they are all connected and look like they are in good shape as this could be where the problem is.

WHEN YOU TURN THE HEAT ON IT JUST BLOWS VERY COLD AIR AND MAKES A CLICKING SOUND

Could be either the blend door actuator or the climate control knob.

2003 winstar no heat

Check the operation of the temperature control door. It is located in the center of the dash behind the radio. Look up between the gas pedal and heater case. It is white in color Move the temp knob while watching the actuator. If it is clicking it is bad. Good luck.
