Ford probe my car ran out of petrol so i put some in but wouldnt start then it did
but was spluttering and when i touched gas pedal cut out now wont start

The fuel pump is very small and located in the fuel tank, these pumps are cooled by the gas around them, if you run out of gas it will overheat and many times fail, this is common.

running out of fuel sucks the dirt off the bottom of the tank it might have caused it to fail i think you can get to it from under the back seat you can see if the pump has power there as well
you have probably got a blockage in either the fuel filter or carb,so first check filter,if ok check carb.take fuel line of carb turn engine over see if fuel comes out if it does then filter ok if not change filter,
First.Check for damaged or disconected vac. hose to sensors than pull and check T P S plug.Ypur off idle condition sounds like a code free situation and should be solved by one of the two sugestions offered.
when you run out of gas it really overheats the fuel pump, it is very small and compact, and it needs the gas around it to cool the heat of operation, I will bet you have burned it out, check the fuel pressure while cranking.
