It shouldn't just fall off unless it broke from age, you did not say how old miles wise the belt was, if you replaced the belt and there is still noise you will have to check everything the belt turns, but most likely one of the idler or the tension-er pulley has a bad bearing in it, check everything by turning it and feeling for roughness in the bearings.

The water pump on the Duratec 30 on the 2001 Mercury Sable is driven by a separate belt on the driver's side of the engine. You can see the belt easily form the top of the engine compartment. The pump is driven by a belt from one of the overhead camshafts in the front bank of cylinders. The diagraom that is provided does not go to the water pump on the 24-valve 3.0 liter in the 2001 Sable.

Try this one. Without engine info, most of the regular sites were not so useful, but this one gives many different belts. You'll need to compare your belt number to the ones on the page so you can get the right one, but these are all for 2001 Sables.
There should be a belt diagram under the hood to remove the serpentine belt. You have to compress the tensioner with a breaker bar or a special wrench. Make sure you decompress it in the right direction otherwise you will snap the tensioner.
There are also two serpentine belt types for the 2002 sable. The S and U type engine. Take the old belt with you the the parts store. As for the diagram, I googled it under images and about a dozen correct ones came up. Remember the 2002 sable is the same as the 2002 Tarus.
