My car was sputtering very bad and the service engine soon light came on. It said to cahnge the coil pack. I changed the coil pack and the plugs and wires. The engine still sputters. We checked the fuel accumulater. There was a bit of water but nothing major. The car is still sputtering and the service engine light is still on. What could be causing this problem other than what I already named?

Sounds definitly mechanical. Also symptoms of spark plug failure or ignition failure of sort, spark plug wires, cap , rotor or coil, or coil pack, ignition module, etc... Therefore the shaking and rough idle. Also a loose terminal at the ECM (computer) would also cause the (miss-fire).
fuel line has a sludge blockage, check the line for dents you will have to get the line replaced if there are any dents that could be the problem - if there is a fuel line filter remove it blow out the line with compressed air, there may also be sludge in the gas tank this is best cleaned out by a mechanic who has the time and patience and knows what he is doing. Its a sign your gas tank is slowly corroding and will soon have to be replaced...

Start by checking for a wire shorting to ground if that checks good you will need to go thru the circuit and check the amp draw at each component, fuel pump,ignition coil,ect. until you find the bad part
Both your air con and defogger (I am assuming you mean front windshield defroster setting, and not the back window) engage the air conditioner pump/compressor.
The screeching can be either a bad belt or a bad compressor.
How long has it been since the belt was changed? If it is old, and slipping, it will cause the screech at speed.
If the belt has recently been changed, and is adjusted properly, I would start looking that the air compressor pump.
