My dash is curling up starting at windshield .

The dash in 1999-2005 Pontiac Grand AM's is known to have issues with "curling" and discoloration. While the only solution to completely fix the issue is to replace the dash, there is another, less professional way to fix it. Start by using a blow dryer to heat up the top of the dash, hold the hairdryer several inches from the dash and move it back and forth until the dash is soft enough to be manipulated. Now, pull the dash up and away from the windshield, and using a strong glue such as "Gorilla glue", glue the underside of the dash. Now push the dash back into place and lodge a hard object between the dash and the windshield. Let the glue dry for at least 16 hours before removing the object used to hold it in place. The dash should no longer looked "curled".

Trying to replace the cracked plastic piece between the dash and the windshield.

The piece you are referring to is approx 5" wide strip rt at windshield? most likely cracked in the center. This piece is part of the whole dash assembly. so to replace it you would need to remove the complete dash.
Now, I have found an alternative for this problem. Coverlay dash covers makes a replacement piece that glues on over top of this piece and it will look like factory. So do a search on coverlay and look on their website it is a easy install. hope this helps

My dashboard is peeling apart. Is there any special kind of glue so I can fix it?

At AutoZone or a similar AutoParts, you can get a variety of vinyl repair stuff. They usually work pretty good, depends how bad your dashboard is. It would not hurt to use a dash cover to protect the dash, also, don't forget to Armorall it.

Gas gage light out

well iwould say that if not update software programing for this problem like some other cars. you are going to have to remove some dash trim to gain access to i/p cluster retaining screws, remove screws then cluster, some clusters have serviceable backlighting bulbs & some you would have to take apart to de-solder where the bulb is located behind the gas gauge and try to find one someware. most clusters know a days are not technician serviceable unless you are a special technician. just send out for repair reinstall, reprogram with latest software, and current milage. done deal.

Top of dash need replacing

There is a company called coverlay that sells a fitted cover for your dash. You can go to there website and search your vehicle to find the right one and the right color.
Here is the info from there website:

98-01 Dodge Ram Pickup Dash Cover 22-802L

98-01 Ram 1500 (with airbag)
98-02 Ram 2500, 3500

This dash cover is custom formed to the exact shape of your orginal dash. It is installed over top of the orginal dash, and is held in place with silicone adhesive (provided). The installtion can usually be completed in 30 minutes or less. No special tools are required. No original parts need be removed. Dash covers can be purchased in several standard colors.
