if you mean the slides, try cutting off about half of the boot that covers the bolt head; then you will have enough of the bolt head exposed so you can clamp on a set of vice clamps. Then get new bolts and make sure you use the correct bolt remover. Sometimes when one gets stripped, the mechanic will replace it with a different type head pattern from the other bolts on your calipers.

Did you check the fuses first? It seems strange that all of the windows and the sunroof wouldn't be working at the same time.

The easiest way would be find one from the junk yard and splice it to your existing harness. Or buy a new socket with a short pigtail, one from the dealer or auto parts store.

The sensor is normally a float attached to the fill cap or at least on top of the fluid reservoir and operates a primitive switch; these aren't real reliable (like so many small gadgets in our cars). The switches often have a 'quick-disconnect' type male and female tab-type plug. Most of these sensors indicate low fluid levels by closing the switch so if you want to disable it, you would have to pull the plug to disable the light. The switch/float assembly is probably not costly to replace if you want the indicator to return to service.
