I'm not sure if that has the "high throttle switch". Usually, a switch that performs when the throttle lever goes back a specific distance. Should you have one, that would probably be the problem. Easy fix.

Starts missing /large dead stop when accelerating

The missing while accelerating is likely due to ignition coils and/or spark plugs going bad. The missing while in park is a normal thing. The car has a rev limiter that will not allow the engine to rev to higher than 3000 RPM while in park.

You can continue replacing parts at random or have a competent diagnosis made to identify probable causes of the problem(s).

po700 code just means you have codes
P0351-IGNITION COIL #1 PRIMARY CIRCUIT

WHEN MONITORED
With battery voltage greater than 8 volts during engine cranking or greater than 13 volts with engine running. Engine RPM less than 3000. No coil in dwell during test.

SET CONDITION
Peak current is not achieved with battery based dwell plus 1.5 msec of diagnostic offset. It takes less than 3 seconds during cranking or up to 6 seconds while running to set.

POSSIBLE CAUSES
- Ignition coil
- Intermittent condition
- ASD relay output circuit
- Ignition coil driver circuit open
- Ignition coil driver circuit shorted to ground
- PCM

Possibilities could include clogged fuel injectors, worn spark plugs, bad coil pack, bad plug wires, clogged catalytic converter, bad or dirty maf sensor.

My Jag s type is giving me a reading that says RESTRICTED PERFORMANCE and it bogs and sputters at 2.5 - 3 RPM. What the heck is going on?

Ignition coils can cause these problems, and a code scanner can tell you which one or more that are bad. If there are more than one that's bad its cheaper to buy a set.
