If this is happening on hills, but runs good downhill and flat areas, then I would suspect the fuel pump.
If it happens excellerating, then either the fuel pump or the fuel filter or even bad gas.
One easy trick to check for bad gas is to take a shot glass sample of the fuel and put it into a styrofoam cup, if it doesn't disolve the bottom out of the cup in 20 seconds or less, add a can of heat to get rid of the water.

If there is no check engine light, check the connection for the fuel pump and fuel guage float. Is is located on the top of the fuel tank. The S-10's had a recall concerning this connector, and I have seen several where the connector contacts showed signs of severe overheating and./or intermittent contact of the 12 volt power feed to the fuel pump.
