You either have a loose or damaged filler neck or a leak , or the gas tank has damage, crawl under it and ID the problem.

with fuel at around 8lb to the gallon you are putting in only 2 gallons and as most of this goes into the reservoir compartment for the fuel pump it is possible that the tank is empty as far as the gauge is concerned.. Try filling the tank to see what the difference is and if it still plays up replace the sender unit in the tank

Had my fuel pump changed then the fuel milage drop from approx. 350 - 400 a tank down to 250 a tank, then the head gasgets were bad an the antifreeze ruined o2 sensors had replaced but gas milage did not...

Check for a leak in the fuel system, especially around the fuel pump and any fuel line that may have been moved during the change. Another possibility is dirt in the fuel injectors is keeping them open so they dribble in too much fuel - you may smell unburned or incompletely burned gasoline in the exhaust when the catalytic converter is cold. A problem with the ignition (bad plug or cable) will also do this, but the engine would probably run a bit rough under load in this case.

If you are getting the mileage from an instrument panel mileage indicator, have you calculated your mileage per gallon with the amount of fuel put in the tank (from the vendor pump) divided by the odometer difference from the last time you filled? Perhaps there is a problem with the fuel level sender and it's reading low.

Is there an easier way to replace the fuel pump other than dropping the tank?

No, the fuel tank must be dropped if there is no access door (which there usually isn't for safety reasons).

Last fill up showed it needed 8 gallons - paid for 9 gallons - guage stopped at the 3/4 mark - Did the same thing the previous fillup.

These gauges are notorious for being inaccurate. The problem could be the gauge or the sensor in the tank. The fuel level sensor is part of the Fuel pump itself. Based on an Avg cost of $140 for a fuel pump unit and the inconvenience of using the trip meter to judge fill ups I would use the trip meter myself but this is your choice.

Inside the cabin strong gas smell after fill up for approx 50 miles. 2003 Honda Odyssey 85k miles.

do you have the same fuel economy as before or does you gas last less miles than before. if you can smell gas whether the car is running or NOT that means you have a leak in your fuel system if it was not a leak, you would not smell it when not running . first thing is check under vehicle after overnight parking and see if there is fuel on the ground if there is , this will give you a starting point where to look for gas leak. Plugged, dirty or poorly connected fuel injector; Leaking fuel filter or fuel filter connections; Punctured or damaged fuel tank; Loose or poorly connected fuel pump; Gas in gas can in trunk.
