I have an 04 beetle. My car keeps overheating. Within this last month I have changed the thermostat, the sensor,the melted cable attached to the fuse block ontop of the battery, the water pump, the timing belt, the low switch fan, and the plastic reservoir because the antifreeze was boiling and it cracked. I just recently got my car back a week ago and the light just came on twice today. What could the problem be now. PLEASE ADVISE!!!!!!!!

If I take out the connector from the fan switch (thermo switch/fan control switch) that light acts just as you described. So check the fuse box on top of the battery, take out the fuses and make sure nothing is melted. Now check if you are getting power to the switch connector. red wire is hot wire, 2 striped wires can be used as ground. Make use you get around 12 volts, not mV.
if you got no power there then try checking continuity in the wiring... you need power there to make thing work :D
SOUND LIKE COOLANT FANS HAS A FAULTY THERMO SWITCH LOCATED AT THE BOTTOM OF THE RADIATOR ON LEFT HAND SIDE.CHECK THE FUSES 8 IN THE ENGINE COMPARTMENT AND CHECK FUSE 16 IN THE PASSENGER COMPARTMENT FUSE BOX.WHEN ENGINE OVERHEATING IF BOTH COOLING FANS WORKING.OVERHEATING PROBLEM COULD BE BLOWN HEAD GASKET.CHECK ENGINE OIL LOOKS LIKE MILK HEAD GASKET LEAKING.SEE WHEN YOU DRIVING LOW AND HIGH SPEEDS THE COOLING FANS SUPPOSE TO BE RUNNING.IF THEY NOT RUNNING THAT IS YOUR OVER HEATING PROBLEM.
You could have several issues here. A blockage in the radiator, bad coolant temp sensor, (not turning the cooling fan on) a bad cooling fan motor. sounds as if maybe one of these may be your primary issue, and the cause of the overheating that originally caused your head gasket problem. Is this a turbo or diesel. Chech to see if your electric fans are turning. If their not turning one or both of the engine temp sensors might be faulty or the fans might have a blown fuse. If the fans are turning you might have a faulty thermostat not allowing fluid to flow into the radiator or the thermostat could be stuck open allowing too much flow and not giving the coolant enouphe time in the radiator to cool down. either way replace the thermostat. Hope this helps salve your issue.
I'd gotten an oil change prior to all of this happening
