Key will not turn in the ignition. It is possible to move the gear shift with some force but the steering wheel is locked. Any ideas how to get the switch working again or to be able to drive the car

try turning the wheel while you are turning the ignition. The steering lock is in the column and can bind up the release which is operated by the key switch.

How do I remove the ignition from a 2005 kia optima

There is a small hole on the side of the ignition switch housing. Turn key to "on" or "acc" position and insert a small punch in the hole to depress the pin on the switch, then pull the switch out. You can locate this pin on the new switch to get a better idea. In the lock position the pin is locked out, but in other positions the pin will push into the housing. If you do not have a key you will have to drill the pin (this is not too difficult).

Trunk wont open and the back seat wont fold down on our kia optim

By switching the lever you locked the inside trunk release, you will need to put lever back. as far as the trunk you may need to remove the rear seat, pop lower part out and then remove the bolts to the top half of the seat then try to reach the lever so it will open from the inside. i've found that many of these cars with the pop lever inside have sticking trunk locks from not being used, what you do first is spary lock good, with wd40 or pb blaster then slide key in and out and try to turn this may take a whhile but it works then tumbler will free up, you just have to keep spraying inside lock and working the key.

2000 Kia Sportage Ignition Switch Removal

if you go buy a new switch you may understand this better. but here goes the bolts that hold the switch to the colum are antitheft. the bolt head will brake off when you tighten them. you should have cone shaped round bolts holding the switch on. you will need a chisel and hammer to get the old ones out. good luck. hope this is helpful. you need to see the new bolts. that come with the new switch to fully understand.
