What is a p1680 mean on a 04 Envoy? there is alos some hesitation while ideling at a stop light and when u have the heater on high

Code P1680 refers to the accelerator pedal sensor, there may be a bad connection or the sensor itself is dirty and needs replacement.
The hesitation could be cause by a dirty throttle body, needs to be cleaned thoroughly front and back.

Throttle sticks at times ?

You probably need to clean your throttle body.

The best way to do this is to remove the throttle body from the engine so the back side of the throttle plate can be thoroughly cleaned with throttle body cleaner and a nylon brush.

CAUTION: DO NOT use a wire brush on throttle body components. DO NOT use any solvent containing methyl ethyl keytone. This type of solvent can cause severe damage to sealed bearings and other parts of the throttle body. DO keep the throttle body cleaner away from the throttle position sensor (TPS) and the idle air control (IAC) as much as possible or remove these items from the throttle body before cleaning.

04 gmc envoy randomly turns off when coming to a stop

You need to have the throttle body cleaned, make sure both the front and rear sides of the throttle body are thoroughly cleaned. Also, while the cleaning takes place, the battery should be disconnected to reset the computer and allow it to relearn to the cleaned throttle body.

When I turn on the A/C the idle starts going up and down and if I'm not giving the engine power it will cut off?

The throttle body needs to be cleaned. Make sure both front side and back side are cleaned thoroughly, this means removing the throttle body from the intake. Also, disconnect the battery while cleaning, this will reset the computer and allow it to relearn to the cleaned throttle body.

The oil pressure has begun to falter sometimes while idling, even causing the car to stop briefly.

The idle RPMs are probably too low because of a dirty throttle body, clean the front and rear sides of the throttle body thoroughly. Also, disconnect the battery while doing the cleaning, this will reset the computer and allow it to relearn to the newly cleaned throttle body.
