Heater control wont switch to the defrost
In your HVAC unit there are at least two 'doors' that are moved by servos. (1) regulates your temperature - the blend door, which adjusts/blends the amount of air coming through your heater core and your air conditioning evaporator. (2) regulates where the air goes - the mode door (there may be multiples of this depending on your model, etc), that selects floor, dash vents, and defroster vents. One of your servos may be bad, or your mode door may be jammed.

Why is it stuck in second gear?
It could be broken or something could be wrong with the transmission for your car and the transmission needs to be replaced.

Tapping in my motor
Hydraulic lifter has failed. Replace the lifter before it wears out the camshaft lobe.
My car wont go past 35 sometimes and bumps when it gets there
Only thing I can is do you have a check engine light. If you do what is the code. Many auto parts stores will read your code for free.
What you said picks up slowly and tops out at 35 mph. My Chrysler 200 took 2 block to get to 2000 rpm 30 mph. That was all it would do. I had a code and changed the throttle body sending unit. The throttle body and sending unit are 1 piece unit on my car. some cars you can change just the sending unit. It improved 75 percent and when we changed gas station 3 weeks later the problem went away. With the limited info you gave that is all I got. Hope it helps.
My 2001 dodge intrepid wont start
Many many reasons, camshaft drive chain failure (2.7 V6) is one, no spark is another, no fuel pressure is another, if not cranking over with the starter then the battery can be the cause or the cables to it are loose or corroded.
